Kasaoka City has always been prosperous with poultry raising and noodle making. The Kasaoka ramen using Tori Cha-siu (well cooked chicken) and chicken stock soup has been loved by the people of Kasaoka. Chicken has always been a part of Karaoke’s diet and has been familiar to the people.
Kasaoka city currently faces the Setonaikai and owns the Kasaoka Bay land which allows the land to be plenty. Popular ramen shops with variety such as, Paitan Ramen, Tonkotsu Shoyu Ramen, Curry Ramen, Shako Ramen, and Spicy Vegetable Ramen are offered as well. Ramen is available in restaurants other than ramen shops such as coffee shops and yakiniku shops as well. Ramen is definitely the “soul food” of the people of Kasaoka.

Kasaoka Ramen
Ramen that uses matured chicken for the base has existed even from the pre-war times and popular shops known for the ramen existed from those times. Eating ramen for breakfast or snacks for people who enjoyed movies was not uncommon.
For the soup, there is the basic one that uses chicken stock soup and also the double soup type that adds in seafood for the broth. For the topping, Nidori (chicken) well cooked with soy sauce is added on top to add a different texture to the ramen. Adding Nidori as a topping is one of the greatest and unique characteristics of the Kasaoka Ramen.
